Buckwheat pancake mess | GF/DF/SF


gluten free - dairy free - sugar free - grain free 

1/2 medium sized banana
1/2 cup of buckwheat, ground
1 pinch of cinnamon
1/4 cup of egg whites
Water for consistency
To serve:
Fresh blueberries
Fresh strawberries 
Nudie coyo

Combine the banana, buckwheat, cinnamon and egg whites in a blender. Blend until a batter forms, if it is too thick add some water for consistency. Heat coconut oil in a non stick fry pan and pour in even amounts. This batter should make a stack of 3-4 pancakes depending on thickness. Stack and add a dollop of coyo and sprinkle of buckwheat. Top with fresh blueberries + strawberries 

TIP: If you only have frozen berries you can use these as a sauce. Simply put a handful in the microwave for 1 minute and pour onto pancakes.
